Lifted Street 750?

I've been building my 750 into a scrambler/dual sport/brat/whatever you want to call it - while my build is going a little slower than a Turtle running through peanut butter in the winter, it's happening! My next step is new tires - a dual sport 120/70(or 80)/17 up front and a 160/80/15 on the rear. I'll have to make front fender risers to clear the new tire size but I'm stuck with the rear. I've been gathering info on custom builds and a few have used a 15" progressive shock for the rear... Anyone on here have advice/experience with changing the height on these bikes? I'm not looking to make this a full dirt bike... I just want a "dual-sport" Harley! Here are some pictures of other builds I've found
